Maddy Grillo is a distinguished professional in private club operations and hospitality management. With a Certified Club Manager (CCM) designation and a Bachelor of Science in Hospitality Management from Kansas State University, she has dedicated her career to creating exceptional member experiences and optimizing club operations.
Currently serving as the Clubhouse Manager at the Saddle & Cycle Club in Chicago, IL, Maddy oversees daily operations, including food and beverage services, housekeeping, events, procurement, aquatics, and member engagement. Since joining the club in 2024, she has led transformative initiatives to improve service offerings, enhance team training, and foster a culture of excellence. The Club has also been the first private club in Chicago to have a Padel Court. Maddy frequently sits alongside the General Manager and works on capital projects and budgets.
Previously, Maddy honed her expertise at Cherokee Town & Country Club in Atlanta, GA, where she advanced through several roles, from Manager in Development to Director of Banquets. During her tenure, she spearheaded member engagement strategies, streamlined banquet operations, and led cross-functional teams to execute events for up to 400 members and guests. Some of the most exciting events are ones she was able to contribute to creativity wise. Her and her team executed over 9 BMI Club Management Wine Dinners under her leadership as well as numerous synchronized plated dinners of over 300 guests. Cherokee Town & Country Club hosts over 2,000 members and their families for July Fourth. Additional Maddy was key in developing and recruiting for internship and MID programs while at Cherokee. Her leadership was instrumental in increasing member satisfaction and developing innovative training programs, even during the challenges of the COVID-19 pandemic. She contributes a lot of success to the teams she is able to train and lead.
Maddy's career in hospitality began at the Manhattan Country Club, where she supported food and beverage logistics for private events and corporate gatherings. Her dedication to service and operational excellence has been recognized through multiple scholarships and awards, including two of the Club Foundation Scholarships: Sally Burns Rambo Scholarship and the Willmore H. Kendall Scholarships in 2022 and the Chicago Club Foundation Management Educational Grant in 2024.
An active contributor to the industry, Maddy has held leadership roles in the Club Managers Association of America (CMAA), serving as a 3-year National Committee member and was K-State Chapter President. Her involvement reflects her commitment to advancing hospitality education and mentorship.

Maddy has been married to her Husband, Josh, a chef from Miami since January of 2023. Josh is from Miami (and not used to Chicago weathers!). They have a dog Hera and enjoy trying new restaurants!
